Summer Sweets: Ice Cream Cookie Casserole

With August slowly but surely coming to a close in the days ahead, and my algorithm already starting to push all things cozy and Autumnal onto my social media feeds – I thought I’d share one final seasonal dessert recipe for the Summer of 2026 that requires only three ingredients total and under an hour of your time to prepare from start to finish.

Best of all? It can feed a room full of people, is great for those with a sweet tooth, and is the absolutely perfect dish for hot, humid days since it will cool you and any guests down instantaneously!

WHAT YOU’LL NEED:

10 SERVINGS:

  • 2 boxes of Hood Ice Cream Sandwiches (flavors of your choosing – see below!)
  • 2 tubs of Cool Whip
  • 2 sleeves of Oreo sandwich cookies, crumbled & crushed.

WHAT YOU’LL DO:

1. In a glass baking dish, line the bottom with the ice cream sandwiches. Try to get the sandwiches to touch the edges of the dish to make cutting it easier when serving. Cover the rows of ice cream sandwiches with a thick layer of Cool Whip. Top with some of the crumbled Oreo cookies.

2. Repeat step one, placing another layer of ice cream sandwiches, Cool Whip, and crushed Oreo cookies on top of the first layer.

3. Place the baking dish in the freezer, uncovered, and allow to sit for 30-40 minutes.

4. Remove the casserole from the freezer, cut into squares, and serve with any additional toppings of your choice!

I’ve seen a version of this “Casserole” that substituted the ice cream sandwiches with mint chocolate chip Klondike Bars and the regular Oreos for the mint ones, and that combination sounds both amazing and refreshing! I have a feeling I’ll be giving that alternative a try before we step into the Fall for good!
