It goes without saying that one of my favorite things about Thanksgiving is the abundance of leftovers I’m sent home with. Every year, without fail, my mother whips up enough food to feed an army before evenly distributing what’s left into her beloved Pyrex Tupperware containers and sending everyone on their way at the end of the night with the hope that they won’t have to cook again for at least 3-4 days – and I always appreciate that!
Now, I know that none of you need me to teach you how to make a sandwich. This recipe is so easy that writing it out makes me feel like I’m being condescending – but if you’re having an “off” day, or if you’re utterly exhausted and just need a guide to get you through the motions – this one is for you. This is one of my favorite things to do with my leftovers every year since it makes for a delicious (and filling) lunch.
WHAT YOU’LL NEED:
3 SERVINGS:
- Carved turkey or chicken breast (my family has chicken on Thanksgiving. We’ve never been a turkey household.)
- 2 spoonfuls of stuffing
- Cranberry sauce
- Mayonnaise
- 3 Pillsbury Grande Rolls or Brown N’ Serve Dinner rolls, sliced in half – but not fully through (you’ll want to fold them over once they’re done cooking.)
- Reheated and/or warmed gravy, for serving (optional)
WHAT YOU’LL DO:
1. Preheat the oven to 425°F and place the rolls on a parchment-lined baking sheet.
2. On one side of the sliced rolls, slather a healthy layer of Mayonnaise. On the other side, slather an even healthier layer of cranberry sauce. Layer the stuffing and carved turkey/chicken pieces along the tops and bottoms of the rolls. Do not fold closed just yet.
SIDE NOTE: Feel free to get creative here. I have friends that put some mashed potatoes in their sliders, or cheese, and others who put leftover vegetables in there, too. This one can be completely customizable if you want!
3. Bake the sliders for approximately 10-12 minutes to reheat everything thoroughly and lightly brown the rolls. Remove from the oven, fold/close the sliders, and serve with a side of warm gravy or gravy drizzled on top!

I will eat anything with stuffing in it/on it regardless of the time of year or occasion, so these sliders are one of my favorite post-Thanksgiving favorites since I can load them up with all the things I like to my heart’s content.
