Springtime Sweets: PEEPS and Pudding Cups

I want to preface this post by saying that I am not typically a fan of PEEPS. While my mother, a die-hard loyalist to the sugary, marshmallow monstrosities, will try and and all flavors that get churned out – I usually skip right over them at Eastertime and head directly to the chocolate bunnies or Reese’s Peanut Butter Eggs.

However, I saw this cute (and very easy!) pudding cup recipe online, designed to look like a rabbit playing in the grass, and decided to give it a try. Much like my Christmas Tree Cake Trifle recipe from last year – this one requires minimum ingredients and the most bare minimum of effort – so why not?

WHAT YOU’LL NEED:

• 1 box of instant chocolate pudding
• ½ cup of sweetened, shredded coconut
• A few drops of green food coloring (I used the gel pastels from Wilton!)
• One package of PEEPS marshmallows, preferably the bunny ones
• ½ cup of Easter M&Ms candies, or mini chocolate eggs

WHAT YOU’LL DO:

1. Prepare the instant pudding according to the directions on the box. Once prepared and chilled (if desired), scoop 2-3 tablespoons into the bottom of your serving glass.

2. Using a couple drops of green food coloring, mix it into your shredded coconut until the pieces are evenly coated and green all the way through. Add a spoonful of the “grass” to the top of your pudding in the serving glass.

3. Top with a PEEP marshmallow, a couple of Easter M&Ms, or mini chocolate eggs and serve! (or let these chill in the fridge until they’re ready to be served,)

This one is so simple, I don’t even think writing out the recipe was necessary – but you never know!

I thought these came out super cute, and if you have kids or younger family members, this is definitely one to try with them since it’s pretty much impossible to mess it up and it allows them to get creative.

And yes, I ate the PEEPS bunny off of this – and I didn’t mind it one bit!
