Fall Foodie: Mini Pumpkin Muffins

When it comes to breakfast choices, I’m a fan of more savory options than sweet ones. That’s not to say I won’t indulge in some sugar and syrup-topped pancakes or French Toast now and then, but I typically lean towards an omelette, bacon and vegetables as my go-to. I’ve always said “I have to be in a certain mood to have a dessert for breakfast.”

Well, that certain mood usually strikes on early and rainy Fall mornings when I want more seasonal flavors to start my day and get me feeling cozy while I work from home. This past week has been a rainy and slightly cooler one- so it seemed like the perfect opportunity to make these two-bite mini muffins that are loaded with warm and satisfying ingredients like pumpkin and cinnamon!

Best of all? They take almost no time to prepare, bake and serve/enjoy!

WHAT YOU’LL NEED:

  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • One 15oz can of pure pumpkin puree
  • ½ cup vegetable oil
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar (for the topping)
  • 1 teaspoon ground cinnamon (for the topping)

WHAT YOU’LL DO:

1. Place mini cupcake liners in pan(s). Preheat oven to 350°F.

2. Whisk flour, baking soda, baking powder, salt, and spices in a medium bowl. Then, in the bowl of a stand mixer, combine sugars, eggs, pumpkin, oil, milk, and vanilla. Add the bowl of dry ingredients and continue mixing until smooth and well-combined.

3. Scoop batter into prepared muffin tins. Sprinkle cinnamon and sugar on top and bake 12-15 minutes. Allow to cool 3-5 minutes before removing from pan(s) and serving.

These are great for a crowd or if you’re just looking for something small to snack on in the mornings (or at night. I’ve definitely grabbed one as a late treat before!)

And you can also substitute some of the granulated sugar with applesauce for a healthier alternative and to include even more Fall flavors in your morning routine!
