Cozy Comforts: Chicken Tortellini Soup

As of this week, we’ve officially had the first snowfall of the season here in New England- which means that Winter has pretty much arrived and it’s time to prepare accordingly! In-between packing up my Fall décor and looking for my favorite pair of snow boots- I also felt it was time to prepare one of my favorite cold weather comfort foods- a mix of pasta and soup in one delicious serving!

This chicken tortellini soup is quick, easy and can be whipped up using store-bought ingredients- which means less time spent at the stove and more time savoring each bite while you watch the flakes fall from the comfort of your window!

And if you don’t get a lot of snow where you live- no worries!- this is still a great recipe to prepare in time for the holidays!

WHAT YOU’LL NEED:

4 SERVINGS:

  • 1 tablespoon extra-virgin olive oil
  • 1 small yellow onion, chopped
  • 2 medium carrots, sliced or chopped
  • ¼ inch thick 2 celery stalks, sliced
  • ¼ inch thick 1 quart store-bought low sodium chicken broth
  • 1 tablespoon miso
  • Kosher salt and freshly ground black pepper
  • 10 ounces store-bought cheese tortellini
  • 2 cups shredded cooked chicken
  • Kosher salt and freshly ground black pepper
  • Fresh parsley, to garnish (optional)

WHAT YOU’LL DO:

1. In a medium saucepan, heat the olive oil over medium heat. Add the onion, carrot and celery, and cook until the onion is translucent, 5 to 7 minutes. Add the chicken stock.

2. In a liquid measuring cup, whisk the miso with 1 cup water to dissolve. Add to the saucepan and bring to a boil, then reduce to a simmer.

3. Add the tortellini and simmer until cooked through, 5 to 8 minutes. Add the chicken; taste and adjust the seasoning with salt and pepper. Divide among four bowls and garnish with fresh parsley before serving.

I’m a big fan of tortellini, period- no matter how it’s cooked/prepared- so this was a no-brainer for me when it came to choosing a pasta to add into the soup.

The fact that it’s combined with soothing and warming ingredients is just an added perk given how frigid it’s been here in Massachusetts!
