The recent round of rainy, chilly, early Spring nights have been spent in the comfort of my apartment watching bad karate movies or scrolling through upcoming seasonal events in and around New England and updating my calendar with my boyfriend while curled up in bed or cuddling on the couch.
Of course, we have to stay fed and hydrated, so I’ve been whipping up an array of snacks to get us through the torrential downpours and occasional snow showers – including this quick and easy appetizer that beautifully combines the savory taste of goat cheese with sweet honey – a perfect duality for those who love a little bit of both the way I do!
These bites take all of twenty minutes to prepare and bake, and even less time to eat since they’re so addictive!
WHAT YOU’LL NEED:

- 2 sheets frozen puff pastry dough, thawed
- One 4-ounce log goat cheese
- Honey, for serving
- Chopped fresh thyme, for serving
WHAT YOU’LL DO:
1. Preheat the oven to 400°F. Roll out the puff pastry a little to flatten it. Using a 2-inch circle cookie cutter (or the rim of a small glass), cut rounds from the dough. Transfer the pastry rounds to a parchment-lined baking sheet and then gently press your thumb into the center of each one.
2. Place 1 tablespoon goat cheese in the indentation of each round (I crumbled a little more on top, too – since I love goat cheese!) Bake until the pastry is golden brown, 8 to 10 minutes.
3. Drizzle each piece with ½ teaspoon honey and garnish with thyme. Serve and enjoy!

I think this Spring might be the season that I start making more recipes that predominantly feature goat cheese. It’s one of my favorite ingredients and I feel like I don’t use it enough in the things I cook and bake.
