Fall Foodie: No-Bake Pumpkin Pie Dip

‘Tis the season for all of the Fall baking – or in the case of today’s recipe I’m sharing – no baking at all! Although I’ve been on more of an apple-flavored-everything kick these past couple of weeks (as I usually am in September!) this quick, easy, no-bake and pumpkin-infused dessert dip was too good not to whip up as soon as I got my hands on some pumpkin purée during my most recent grocery shopping outing.

With just a handful of ingredients and in well under thirty minutes, you can also prepare this smooth, creamy and delightfully sweet dip – which is a perfect topping for graham crackers, gingersnaps, or apple slices!

WHAT YOU’LL NEED:

1 SERVING (PLENTY FOR A CROWD:)

  • 1 can pumpkin purée
  • 1 package Jell-O vanilla pudding mix
  • 1 teaspoon ground cinnamon
  • 2-3 drops Pumpkin Pie Spice Blend Extract
  • 1 container of Cool Whip, unfrozen
  • Seasonal sprinkles (optional)

WHAT YOU’LL DO:

1. In a medium or large mixing bowl, combine the pumpkin purée, vanilla pudding mix, cinnamon and Pumpkin Pie Spice Blend Extract. Mix well until evenly combined, making sure to scrape any pudding mix from the sides and bottom of the bowl to evenly incorporate everything.

2. Once thoroughly combined, add the container of Cool Whip and mix again until the texture of the dip is smooth and there are no lumps. Let chill in the refrigerator for approximately 10-15 minutes.

3. Remove from the refrigerator, top with sprinkles (again – totally optional!) and serve!

This dip is heavenly, and depending on how much more pumpkin flavoring you want in it – you can add a couple more drops of the extract for an extra kick! I’ve also seen versions that include honey or maple syrup, so it’s pretty customizable!

For my next recipe, I think it’s about time I got back into some soup/stew options – or a return to some pasta dishes. We’ll just have to wait and see!
