Summer Snacks: Peach Cobbler and Brie Dip

I want to preface this post by saying don’t let the photos fool you! While this dish may not photograph as well as some of the other things I’ve prepared in the past, and is similar to an odd-looking-but-outstanding cranberry dip I shared a couple of years ago, this one is a keeper for the end-of-Summer season, for sure!

It’s about that time of year where my friends, family, neighbors, etc., begin squeezing in as many backyard BBQs, community cookouts, pool parties and beach days into the calendar as possible before the kids return to school, the PTO starts to run out, and Summer comes to a close. While I’m extending the hotter days with a trip to the desert at the end of this month – I’ve been participating in any and all the “East Coast Summer” activities as I can since I don’t want to miss out.

And those activities usually involve bringing a dish or two to share. For that, I’ve been whipping up this baked brie and peach “cobbler” dip to serve as an appetizer or side dish to any main meals and/or entrées. With just a handful of ingredients and twenty minutes, you can serve a sweet and savory dish that’s packed with Summertime flavor!

WHAT YOU’LL NEED:

4-6 SERVINGS:

  • One wheel of Brie cheese, scored
  • 2 cups diced (or sliced!) peaches. *I used sliced in this recipe since I had quite a few extra peaches in my apartment this time around!*
  • ½ lemon
  • ½ cup light brown sugar
  • 2-3 tablespoons liquid honey
  • ¼ cup chopped pecans (optional)

WHAT YOU’LL DO:

1. Preheat your oven to 350°F.

2. Place the scored Brie in the center of a baking dish, and surround it with the diced/sliced peaches. Squeeze the ½ lemon over the peaches, then sprinkle the ½ cup of brown sugar over them, as well.

3. Drizzle the honey over both the peaches and Brie, and bake for approximately 20-25 minutes or until the Brie has completely melted and the peaches have started to caramelize.

4. Remove from the oven, top with the chopped pecans, and serve immediately with toasted buttery bread or crackers.

I personally love taking a scoop of this stuff, spreading it between toasted bread pieces, and eating it like a grilled cheese sandwich. The brie and the peaches compliment each other perfectly, and the caramelized brown sugar and pecan pieces add a fun and much-needed crunch to each bite!

You can also add seasoning or spices if you’re looking for a little something extra with this one, like thyme. It’s pretty easy to customize, depending on you and/or your guests!
