Summer Snacks: Dill Pickle Chicken Salad

I love a good, chilled chicken salad sandwich or a scoop of it on a buttery cracker during the Summertime – be it at a backyard cookout, during a snack break on a beach day, or when I’m taking a few minutes to refuel on one of the days I come into the office throughout the week. Chicken salad (and sometimes tuna salad if it’s prepared properly!) are one on my favorite go-to’s this time of year.

But then my social media algorithm posed the question – “what if we took chicken salad, and added dill pickles to it?” – and it didn’t take me long at all to fall down the rabbit hole of pickle recipes and then to whip this one up almost immediately after bookmarking it.

And now that I have? I’ve been making it constantly!

WHAT YOU’LL NEED:

4-6 SERVINGS:

  • 1 ½ cups cooked, shredded chicken
  • ⅔ cup chopped dill pickles
  • ¼ cup diced white onion
  • ¼ cup diced green pepper
  • ¼ cup diced celery
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons pickle juice
  • 1 tablespoon chopped fresh dill (my local market was out of dill before I made the batch shown in the pictures, but usually it’s included!)
  • Salt and pepper, to taste
  • Toast or crackers for serving

WHAT YOU’LL DO:

1. In a large bowl, combine the mayonnaise, sour cream and pickle juice. Mix well. Gradually add in the shredded chicken, chopped pickles, onion, green pepper and celery. Continue mixing to make sure off of the chicken is coated well. Top with the chopped dill and salt and pepper (to taste) and mix again.

2. Cover the top of the bowl with plastic wrap and let chill in the refrigerator for an hour or until you’re ready to serve. Scoop some on toast or crackers (I used Club Crackers!) and enjoy!

Is this one tangy and tart? You bet. Is it now my new favorite way to whip up chicken salad? Absolutely. I’m excited to prepare more of this for my Girls Trip/Getaway I have planned in a few weeks since we all love bringing our favorite recipes & concoctions in bulk for the whole group to try out!
