Summer Refresher: The Sunset Cocktail

It’s been a hot minute or two since I shared a beverage recipe here on ‘Coffee & Chiffon‘, especially one so aesthetically pleasing and pretty as this one! I’m more of a food recipe enthusiast, but when I saw this one making the rounds on social media – I knew I had to try it for myself since I already had everything available in my kitchen!

With just a couple of ingredients – you can whip up these pretty “Sunset” cocktails (which are just as good in mocktail form!) with swirling red/orange and pinkish shades for your next backyard BBQ, cookout, beach day or pool party.

WHAT YOU’LL NEED:

  • ½ cup of orange juice (no pulp!)
  • ½ cup of pineapple juice
  • 1 shot of coconut rum or coconut cream liqueur (optional)
  • Splash of grenadine
  • Pineapple and/or orange slices for garnish (optional)

WHAT YOU’LL DO:

1. In the drinking glass of your choice, add the ½ cup of orange juice, ½ cup of pineapple juice and, if making a cocktail, the shot of coconut rum or coconut cream liqueur. Stir a few times.

2. Add a splash of grenadine to the top of the beverage and allow it to sink to the bottom of the glass – DO NOT STIR UNTIL SERVED – and garnish each glass with a fresh slice of pineapple or orange.

3. Serve and enjoy!

This one is super easy, super quick, and absolutely delicious. I’ve been making the mocktail version on the hotter days when I’m working from home since it’s a refreshing sweet treat in the afternoons when I need one the most!
