Simple Snacks: Parmesan-Crusted Pickles

Like a lot of people (I’m assuming), I’m typically a little weary when I see recipes or “life hacks” on social media that are cut/edited in a way to look ridiculously quick or simple – only to be anything but when it comes to trying them out in real life. Key ingredients or crucial steps can be missed in an over-simplified, 30-second video or tutorial, and I’ve been burned more than one when attempting organizational or baking “hacks” – literally and figuratively!

But I’m happy to report that this 15-20-minute, keto-friendly snack recipe I saw not too long ago while mindlessly scrolling Instagram is the real deal. It requires two ingredients (plus whatever dipping sauces you want to use!) and tastes great – and I’ve made it quite a few times since my first attempt with consistently good results!

WHAT YOU’LL NEED:

1 INDIVIDUAL SERVING:

  • Shredded Parmesan Cheese
  • Sliced Pickles (the style/flavor of your choosing – I used Bread & Butter ones!)
  • Dipping sauce of your preference (I used ranch!)

WHAT YOU’LL DO:

1. Preheat your oven to 375°F. While the oven is heating up, line a baking sheet with parchment paper, and using a paper towel – pat dry the pickles so they’re free of excess brine.

2. Sprinkle a thin layer of shredded parmesan cheese on top of the parchment paper. Assort the dried pickles on top of the layer of cheese, and then sprinkle the tops of the pickles with another thin layer of shredded parmesan.

3. Bake for approximately 15-20 minutes (closer to twenty if you want the edges of the cheese extra crispy, which is how I prefer it!) Remove from the oven and let cool for 3-5 minutes. Cut into squares to serve, or simply eat as is with your dipping sauce of choice!

I’ve seen people use these cheesy pickle “slices” as bread, stacking sandwich toppings and condiments between them. While I haven’t reached that point of my further exploration of this recipe just yet – it’s definitely tempting!
