Summer Sides: Lemon Pesto Pasta

My mom has been taking care of me and doting on me since my wisdom tooth removal last week – whipping up soft dinners and desserts (and providing plenty of pudding and chocolate milk!) while I’d been staying with her throughout my recovery and while I worked remotely from her house over the past few days. She’s an absolute gem and I love her so much.

So before it came time for me to pack up and (reluctantly) return to my apartment in Western Massachusetts, I wanted to do something nice for her to thank her for babying me. Knowing how much my mom loves all things lemon/lemon-flavored, and having to stop to pick up a few essentials at Trader Joe’s anyway, I grabbed some seasonal ingredients they have in stock this time of year to put together a quick, easy, zesty and creamy pasta dish for dinner for her to show my appreciation,

If you’ve got 15-20 minutes, then you’ve got yourself a great Summertime meal!

WHAT YOU’LL NEED:

6 SERVINGS:

  • 1 Box Trader Joe’s Organic Lemon Torchietti Pasta
  • 1 Jar Trader Joe’s Lemon Pesto Sauce
  • 1½ Cups Ricotta Cheese
  • ½ cup spinach, steamed and drained of excess water
  • Salt and pepper, to taste

WHAT YOU’LL DO:

1. Cook the box of torchietti pasta as outlined on the box, saving about a half cup of the pasta water to pour back into your pan after straining the rest.

2. Gradually add the jar of lemon pesto to your pan, mixing/stirring to make sure it coats all of the torchietti evenly. Add the ricotta cheese the same way, mixing/stirring to evenly coat the pasta.

3. Add the spinach, salt and pepper. Mix/Stir thoroughly one more time to ensure it has been evenly distributed throughout the pasta before serving.

I’d also grabbed one of the Trader Joe’s mini lemon sheet cakes for dessert to round out the meal, which she was over the moon about – so overall I’d say it was a success! We even had enough of everything left over to do some meal prep for the week.

And I’ve recently fallen down the Trader Joe’s recipe rabbit hole on social media, so expect a lot more of these types of recipes in the future!
