Summer Sides: Salt and Vinegar Roasted Potatoes with Feta and Dill

It seems almost cruel to myself to share this recipe today, considering I had one of my wisdom teeth pulled yesterday afternoon (and stayed awake during the process – absolutely do not recommend!) and therefore I am on a very soft food diet for the next few days while I wait for my stitches to gradually dissolve as my mouth heals up.

But I had whipped up this recipe last week, prior to my surgery, and it was a big enough hit that I knew I wanted to share it sooner than later! You all know I love a good side dish at any Summer cookouts or BBQs – especially potato ones – and this flavorful combination takes just under an hour to prepare and serve for yourself or any hungry guests who was looking for something to go with their hamburgers or hot dogs!

WHAT YOU’LL NEED:

6 SERVINGS:

  • 2 pounds small new potatoes, halved (or left whole)
  • 1 cup distilled white vinegar
  • 2¼ teaspoons sea salt, divided
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • ½ cup crumbled feta cheese
  • ½ cup chopped fresh dill Flaky salt, for serving

WHAT YOU’LL DO:

1. In a large pot, combine 2 cups of water and the potatoes, vinegar and 2 teaspoons of the sea salt. Boil with the lid on until the potatoes just start to get tender but are still a bit firm in the center, about 10 minutes (depending on the size of your potatoes).

2. In the meantime, preheat the oven to 425°F and line a large sheet pan with parchment paper.

3. Drain the potatoes. Carefully toss them with the olive oil, remaining ¼ teaspoon sea salt and oregano. Arrange them in a single layer on the prepared sheet pan and then roast until deeply golden and crisp, 20 to 30 minutes.

4. Toss the hot potatoes with the garlic. Transfer the potatoes to a serving bowl and then top with the feta and dill. Add a bit of flaky salt to the top, if desired.

I’m looking forward to making another batch of this dish when my mouth is healed up and I can chew without restrictions again! These were so delicious, and such a satisfying combination of crispy and creamy all at once!

I might even incorporate a salt & vinegar pasta salad while I’m at it!
