Derby Day Drinks: Watermelon Sweet Tea

I’ve never had any interest in watching the Kentucky Derby (I’m not a fan of any kind of animal racing,) but year after year I’m invited to stop by “Derby Day” themed parties and get-togethers, be it by friends of co-workers, which usually consist of a lot of snacks, a lot of colorful dresses, and a lot of big hats- which is something I can get behind! Dressing up and eating good food is always a good time!

And while this year’s celebration featured a lot of pasta, sweets, and mint julep mocktails- it got me thinking about one of my favorite beverages to enjoy this time of year and all through the Summer. Not just because when made properly, it’s as pink as many of the outfits and accessories I see throughout Derby Day, but also because it’s just downright delicious and refreshing on a hot, sunny day- and it doesn’t take long to make at all.

WHAT YOU’LL NEED:

12 SERVINGS:

  • 1 cup sugar
  • 6 tea bags
  • 12 cups seeded, diced watermelon
  • 2 tablespoons freshly squeezed lime juice
  • Fresh mint leaves (optional)

WHAT YOU’LL DO:

1. In a large saucepan, combine the sugar and 2 quarts filtered water and bring to a boil over medium heat. Boil until the sugar has completely dissolved and the liquid is clear, about 5 minutes. Remove from the heat, add the tea bags to the sugar water, cover and steep for 15 minutes.

2. Working in batches, puree the watermelon and lime juice in a blender or food processor. Strain and transfer to a gallon-sized pitcher. Remove the tea bags and add the tea to the pitcher. Do not add ice. Stir and pour into ice-filled glasses. Garnish each glass with two fresh mint leaves, if desired, and serve.

You can also serve this one with chunks of fresh watermelon in it for some extra flavor (and for a cute aesthetic/presentation) but I usually just enjoy it as is. It’s absolutely delightful!

Of course, you can make some of this for other occasions besides Derby Day, too! I can attest that this sweet tea is a big hit at cookouts, pool parties, and beach days- just to name a few get-togethers where I’ve brought some along!
