Game Day Eats: Buffalo Chicken Skillet Dip

The Super Bowl may be over and done with for another year, but that doesn’t mean I still can’t enjoy a spicy, cheesy and creamy dip with my tortilla chips, crackers, pita bread pieces, etc., the next time I’m snacking alone or entertaining company. There’s never a bad time for dip, really!

That was the case just a couple of short days ago when, after buying so much food to eat during the big game and then unintentionally overdoing it on chicken wings shortly before kickoff, I didn’t want my dip ingredients (or my tortilla chips!) to go to waste.

And in under 30 minutes, I whipped up this dip for Troy and I for a late-afternoon snack that was so quick, easy and delicious that I have a feeling I’ll be making another batch very, very soon.

WHAT YOU’LL NEED:

8 SERVINGS:

  • 2 cups rotisserie chicken, shredded or cubed
  • ½ cup buffalo sauce or hot sauce of your choosing
  • 8 ounces cream cheese, room temperature
  • 3 teaspoons dry ranch seasoning mix
  • ½ cup sour cream
  • ½ cups mild cheddar cheese, shredded
  • ¼ cup blue cheese crumbles (optional for topping)
  • Thinly chopped celery (optional for garnish)

WHAT YOU’LL DO:

1. Preheat the oven to 350°F. In a large bowl, combine the chicken, buffalo sauce, cream cheese, ranch seasoning mix, sour cream, and shredded cheese. Stir well to combine.

2. Pour the mixture into an oven-safe skillet. Transfer the skillet to the oven and cook for 20-25 minutes, or until cheese is hot and bubbly. Stir well before serving.

3. Sprinkle the dip with blue cheese crumbles and celery (optional). Serve hot with your snack of choice.

__________

Of course, you can adjust the ingredients based on your sensitivity to heat or personal preferences. I like my dip pretty spicy, for example- so I’d likely add more hot sauce to mine. But, Troy likes it a little more mild- so when making him his own version I might incorporate more sour cream or shredded cheese to tone down the spicy levels.

But there’s really no wrong way to make this one- and it’s appropriate year-round and for any occasion – so don’t be afraid to get creative.

I just need to remind myself to whip some up during next year’s Super Bowl before I dive into the chicken wings!
