Celebratory Treats: Birthday Cake Rice Cereal Bars

We’re a couple of days removed from my birthday, but I’m still feeling the love as more beautiful messages come in, more cards arrive at my apartment, and more big shows/concerts and tours by some of my favorite artists are announced for later on this year. It feels like my party is still ongoing and never-ending- and I’m 1000% here for it!

And although I had the biggest tiramisu in my life on my actual birthday this past Monday, I still whipped up a batch of these sweet, gooey and sprinkle-covered cereal bars just for fun. With just a handful of ingredients and only twenty minutes to prep and assemble (and cooling doesn’t take that long at all!) these are the perfect treat to celebrate yourself or a loved ones’ special day!

WHAT YOU’LL NEED:

24 SERVINGS:

  • Nonstick cooking spray
  • 3 tablespoons unsalted butter
  • One 10-ounce package marshmallows
  • 6 cups crispy rice cereal
  • 3 tablespoons rainbow sprinkles, plus more to garnish
  • 2 cups white chocolate chips

WHAT YOU’LL DO:

1. Spray a 9-by-13-inch baking dish and silicone spatula with nonstick cooking spray. Set aside.

2. In a large saucepan over medium heat, melt the butter. Add the marshmallows and stir until melted. Remove from the heat and stir in the cereal and rainbow sprinkles.

3. Working quickly, use the prepared silicone spatula to evenly press the cereal mixture into the prepared pan. Try not to pack the cereal too firmly so the treats stay light and fluffy.

4. In a large microwave-safe bowl, melt the white chocolate in 30-second increments, stirring until completely smooth. Spread evenly over the cereal treats. Top with more rainbow sprinkles. Cool until completely set, then slice into 2-inch bars.

So I may have gone a little overboard with the sprinkles this time around, but it didn’t impact the taste of the bars at all. These were so fluffy and fun, and have been a delightful dessert to reach for over the past couple of days.

And feel free to add a few extras into your bars too, if you want! I’ve seen versions that have chocolate chips, M&Ms, and even raisins (??) incorporated into them! If it’s your birthday- it’s your call. Those are the rules!
