Happy First (Official!) Day of Summer, everyone! Even though the forecast for the next week or so is calling for plenty of rain and more than a few scattered thunderstorms where I live- today is shaping up to be nice, warm and very sunny. It’s a fitting way to kick off the season- and I figured it was the perfect time to share a quick, easy, and delightfully refreshing Summertime recipe that has been one of my favorite alternatives to regular ice cream bars since I was a kid!
If you like bananas, chocolate and sprinkles as much as I do- and you aren’t afraid to get a little creative and fun with customizing your own “pop”, then you’ll enjoy this one for sure!
WHAT YOU’LL NEED:
6 SERVINGS:
- 3 large firm yellow bananas, peeled and halved crosswise
- 8 ounces semisweet chocolate chips
- 1 tablespoon canola oil
- ⅔ cup finely chopped peanuts (optional)
- ⅔ cup sprinkles (optional)
WHAT YOU’LL DO:
1. Insert a popsicle stick or skewer into each banana half and place on a medium baking sheet lined with wax paper. Freeze for 30 minutes.
2. While the bananas are in the freezer, place the chocolate chips and canola oil in a medium, microwave-safe bowl with a bottom wide enough to accommodate one banana half. Microwave on high in 30-second increments, stirring after each one, until melted.
3. Remove bananas from freezer, roll in chocolate, and immediately top with sprinkles and/or chopped peanuts. Freeze the bananas again for one-two hours before serving.

I can’t stress how easy and relatively mess-free this recipe is, or artfully describe just how refreshing it feels to bite into an icy and chocolatey banana on a hot day. It’s a simple pleasure that I enjoy over and over every Summer!
And you can serve these up with chilled strawberries, pineapple and/or watermelon, too- for a sort of “citrus charcuterie” that you can enjoy on your own or serve to guests for your next Summertime celebration!
